Every family has a celebration cake, and in so many Mexican homes it is this one. Tres leches shows up for birthdays, baptisms, and any Sunday that feels like it deserves something sweet. A light sponge drinks up three milks overnight and somehow turns into the softest, creamiest cake you will ever put a fork in.
The magic of tres leches is that it should be impossible. You pour three cups of milk over a cake and instead of falling apart, it turns silky and rich while still holding its shape. The secret is a sponge made with whipped egg whites and no butter, so there is room in the crumb for all that milk to move in.
Why This Cake Works
It is a make-ahead dessert by design, since it needs hours in the fridge anyway. It feeds twelve. And it walks the line between light and indulgent better than any dessert I know. If your sweet tooth leans creamy, my arroz con leche is built from the same comforting flavors.
Ingredient Notes
Separated eggs are the structure: yolks for richness, whipped whites for the airy crumb that soaks without collapsing. The three milks are sweetened condensed, evaporated, and whole milk. I like swapping the whole milk for heavy cream when I want a slightly richer soak; the flavor stays exactly the same, the texture just gets a little more luxurious. Real vanilla in both the cake and the whipped cream ties it together.
How to Make Tres Leches Cake
Beat the yolks with sugar until pale, fold in the dry ingredients, then fold in whipped egg whites and bake. Once the cake cools, poke it all over, pour the milk mixture slowly across the top, and let the fridge do the work overnight. Whip the cream topping and finish with cinnamon and strawberries just before serving.
Frequently Asked Questions
How long does tres leches need to soak?
Four hours is the minimum, but overnight is when it becomes what it is supposed to be. Day two might be even better than day one.
Why did my cake turn out soggy instead of moist?
Usually it means the milk went on while the cake was still warm, or the whites were not whipped enough to build structure. A completely cooled, airy sponge drinks the milk evenly.
Can I make tres leches ahead?
It is the ideal make-ahead dessert. Soak it the night before and hold the whipped cream topping until a few hours before serving.
Storage
Covered in the fridge, tres leches keeps for 4 days. It does not freeze well once soaked, but it rarely survives long enough for that to matter.
Tres Leches Cake
Ingredients
For the cake
- 5 large eggs separated, at room temperature
- 1 cup granulated sugar divided
- 1 cup all-purpose flour
- 1 ½ teaspoon baking powder
- ¼ teaspoon salt
- ⅓ cup whole milk
- 1 teaspoon vanilla extract
For the three milks
- 14 oz sweetened condensed milk 1 can
- 12 oz evaporated milk 1 can
- ½ cup whole milk or heavy cream for a richer soak
For the topping
- 1 ½ cups heavy whipping cream cold
- 3 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- ground cinnamon for dusting
- fresh strawberries optional
Instructions
- Prep. Preheat the oven to 350°F and lightly grease a 9x13 inch baking dish.
- Beat the yolks. Beat the egg yolks with ¾ cup of the sugar until pale and doubled in volume. Stir in the milk and vanilla.
- Fold. Sift the flour, baking powder, and salt over the yolk mixture and fold gently until just combined.
- Whip the whites. In a clean bowl, beat the egg whites to soft peaks, gradually adding the remaining ¼ cup sugar. Fold them into the batter in two additions, keeping as much air as possible.
- Bake. Pour into the dish and bake 22 to 25 minutes, until golden and a toothpick comes out clean. Cool completely.
- Soak. Whisk the condensed milk, evaporated milk, and whole milk together. Poke the cooled cake all over with a fork and pour the milk mixture slowly over the whole surface.
- Chill. Cover and refrigerate at least 4 hours, ideally overnight, so every crumb soaks up the milk.
- Top and serve. Whip the cream with the sugar and vanilla to medium peaks and spread over the cake. Dust with cinnamon and finish with strawberries.
