Chunky Guacamole with Serrano and Lime

Mash some avocado smooth and leave some in pieces for a guacamole that clings to a chip and still tastes freshly made.

Ingredients
  

  • 3 medium ripe avocados
  • 2 tablespoons fresh lime juice, plus more to taste
  • ¾ teaspoon fine salt, plus more to taste
  • cup finely diced white onion
  • 1 small serrano chile, seeded and finely minced
  • ¼ cup chopped cilantro
  • 1 small Roma tomato, seeded and finely diced, optional

Instructions
 

  • Halve the avocados and remove the pits with a spoon. Scoop the flesh from two avocados into a bowl. Add lime juice and salt, then mash with a fork until mostly creamy.
  • Dice the third avocado. Fold it into the bowl with onion, serrano, and cilantro. Add the optional tomato if you want a juicier party-style guacamole.
  • Taste and adjust salt, lime, and serrano. Serve immediately with chips or warm tortillas.
