Ingredients
  

For the cherry filling

  • 1 ½ cups cherries fresh or frozen
  • 2 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • cinnamon dash
  • 1 teaspoon vanilla extract
  • ½ juice of lemon

For the crisp topping

  • cup rolled oats
  • ¼ cups all purpose flour
  • 2 tbsp brown sugar
  • 1 tablespoon granulate sugar
  • dash of cinnamon
  • ½ teaspoon vanilla extract
  • 3 tbsp melted butter

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease two ramekins or small baking dishes.
  • Make the cherry filling:In a medium bowl, combine the cherries, granulated sugar, cornstarch, cinnamon, vanilla extract, and lemon juice. Stir until the cherries are evenly coated.
  • Prepare the crisp topping:In a separate bowl, mix together the oats, flour, brown sugar, granulated sugar, cinnamon, and vanilla. Pour in the melted butter and stir until the mixture is crumbly.
  • Assemble the crisps:Divide the cherry mixture evenly between the two ramekins. Spoon the crisp topping generously over each.
  • Bake to golden perfection:Place ramekins on a baking sheet and bake for 20 minutes, or until the tops are golden brown and the filling is bubbling.
  • Serve warm:Let cool for a few minutes before topping each crisp with a scoop of vanilla ice cream. Enjoy immediately!
