Overnight oats are my answer to busy mornings, the make-ahead breakfast that lets future-me sleep a few extra minutes. It is a long way from the champurrado and chilaquiles mornings of my childhood, but it carries the same lesson my mom lived by: a little planning is its own kind of love. I stir a jar together before bed and wake up to breakfast already done, ready to dress up however I am feeling. Make a few jars at once, get creative with the toppings, and let your mornings feel a little more handled.
Mix the BaseIn a large bowl or container, combine the oats, chia seeds, milk, Greek yogurt, and maple syrup. Stir well until fully mixed.
Chill OvernightCover and refrigerate for at least 4 hours or overnight, allowing the oats and chia seeds to absorb the liquid
ServeIn the morning, give the oats a good stir. Divide into 4 bowls or jars. Top each serving with berries, a sprinkle of hemp seeds, and a drizzle of honey.Enjoy cold straight from the fridge or let it sit out for a few minutes to take the chill off.
